Effusive aromas from the start, the notes of juicy luscious tropical fruit layered with crisp green apple and lemon zest carries right through to the palate. Fresh fruit flavors echo the aromas and the smooth, almost creamy texture in the core is lifted with crisp citrus and refreshing acidity. Pairs beautifully with so many dishes but it’s happy to fly solo on a sunny afternoon.

A complex and nuanced white wine, grown on the Farina Vineyard of Sonoma Mountain AVA. A tour de force of fermentation styles bringing together Acacia barrels, stainless steel and concrete egg, blended with ideal growing conditions, results in a classic California Sauvignon Blanc.

We fermented in a combination of small (240 gal) concrete egg, Acacia barrels, and small stainless-steel barrels. We kept it chilly in the cellar for a long cool fermentation, which enhances the fresh juicy fruit flavors and exotic tropical fruit notes. We stirred each barrel during the 5 months of fermentation and aging, which adds a touch of creaminess.

Our Sauvignon Blanc classically pairs well with delicately flavored foods like chicken, filet of sole or oysters, as well as many green vegetables like asparagus, peas, and artichokes. The bright acidity and fruity flavors also complement dishes with mild sauces, vinaigrettes, or fresh herbs like cilantro, parsley, basil, or rosemary.
